The full text of the article is published on Ringbearer, and we wouldn't dream of revealing all the details, but fans should look for mention of a major character being wounded and tended by his horse, and another horse approaching and then running away from an unspecified cave. Such scenes are not present in the book and may, perhaps, relate to "background" stories.
Less alarming tidbits include mention of the fact that Frodo and Galadriel are both going to be filmed on horseback (both characters do some riding in the book). And the article announces that Jackson intends to add a New Zealand insect (the weta) to shots of places which are particularly evil. This fact should not be nearly so upsetting as some of the others mentioned briefly in the article.
More details about how horses will and won't be used in the films are provided, as well as some numbers of horses being cast and the fact that horses, like humans and other creatures, will be replicated visually through CGI for the final effects shots in some scenes.
