In 1998, after years of trying to figure out how the white cheese dip is made by Mexican restaurants, I posted the following request for the recipe in rec.food.recipes. MONTHS PASSED. Eventually, someone sent me the white cheese dip recipe. I post the original message below for those of you who just enjoy browsing the site and learning more about how desperate white cheese dip lovers can become when they go without.

I'm looking for a recipe for a specific type of cheese dip.
It's served in many Mexican restaurants throughout Georgia,
Tennessee, and nearby states.

Although it's called "Chili Con Queso" on many menus, it
really is made with jalapenos.  The cheese is always white
and milk is somehow involved in the process of making the
dip.  Sour cream is NOT an ingrediant.  Nor is this pepperjack,
though that may be an ingrediant (but all my attempts to make
a pepperjack dip have met with failure -- they are not the
same).  The cheese dip, when heated, has a very creamy texture
and stays semi-liquid as it cools.

There was once a white chili con queso you could buy in the
stores.  It was  made by Casa Nobleza, who seem to have gone
out of business.  Their dip was a commercial version of this
recipe, in case anyone has tried that.  However, this dip
tended to harden as it cooled (but that was the only
difference I'm aware of).  The dip was popular, but they
apparently required stores to carry their other dips, which
were not.  So the stores discontinued their contracts.

I now live in New Mexico and they've never heard of this
dip out here.  I have only found this white cheese dip in
restaurants owned and operated by Mexican families.  I hope
it's not a well-guarded secret.  There is nothing else like
this dip.
